Ingredients

  • 8 oz Dark chocolate chopped
  • ½ cup Unsalted butter
  • 1 cup Granulated sugar
  • 3 Large eggs
  • 1 teaspoon Vanilla extract
  • ¾ cup All-purpose flour leveled
  • ¼ cup Unsweetened cocoa powder sifted
  • ½ teaspoon Salt
  • cup Strong espresso or coffee cooled
  • 8 oz Mascarpone cheese room temperature
  • 1 cup Heavy cream cold
  • ½ cup Powdered sugar
  • 2 tablespoon Coffee liqueur optional
  • Cocoa powder for dusting as needed

Instructions

  • Preheat the oven to 350°F (175°C). Grease a 9x13 inch baking pan.
  • Melt dark chocolate and butter together using a double boiler or microwave. Let cool slightly.
  • Whisk in sugar, eggs, and vanilla into the chocolate mixture until smooth.
  • Fold in flour, cocoa powder, and salt. Do not overmix.
  • Pour into prepared pan and bake for 25–30 minutes or until a toothpick comes out with moist crumbs.
  • Cool brownies on a wire rack. Poke holes over the surface with a skewer.
  • Brush espresso or coffee evenly over the brownie surface using a pastry brush.
  • Whip heavy cream and powdered sugar with an electric mixer to soft peaks.
  • Fold in mascarpone cheese and coffee liqueur (if using) until smooth.
  • Spread the mascarpone mixture over cooled brownies evenly.
  • Chill for at least 4 hours. Dust with cocoa powder before serving.
