Ingredients

  • 1 cup Mascarpone cheese Full-fat for best texture
  • 0.5 cup Heavy cream Cold
  • 0.5 cup Powdered sugar Sifted
  • 2 teaspoon Instant espresso powder Dissolved in 1 tablespoon hot water
  • 1 tablespoon Coffee liqueur Optional
  • 1 teaspoon Vanilla extract Pure
  • Salt Pinch, enhances flavor
  • 1 cup Ladyfinger cookies Finely crushed
  • 8 oz Dark chocolate For coating
  • 2 tablespoon Cocoa powder For dusting

Instructions

  • Mix mascarpone, sugar, espresso, liqueur, and crumbs until smooth.
  • Refrigerate 30 minutes.
  • Scoop and roll into even truffles.
  • Refrigerate another 30 minutes until firm.
  • Dip each in melted chocolate.
  • Sprinkle with cocoa powder before chocolate sets.
  • Refrigerate until firm and glossy.
