Instructions
Preheat oven to 350°F and line baking sheet with parchment paper.
Whisk flour, matcha powder, baking soda, and salt in mixing bowl.
Beat coconut oil with both sugars until fluffy and well combined.
Mix in applesauce and vanilla until smooth and creamy, then stop.
Gradually add dry to wet ingredients and stir just until combined.
Gently fold in optional chocolate chips or chopped pistachios if using.
Scoop dough into balls and place on parchment-lined baking sheet.
Flatten each cookie slightly with your palm to create even shape.
Bake cookies for 10–12 minutes until edges are lightly golden brown.
Let cookies cool 5 minutes on sheet before transferring to rack.
Cool completely on rack for best texture and matcha flavor release.
Store in airtight container to keep cookies soft and flavorful longer.
