  • 0.25 cups brown sugar
  • 0.25 cups unsweetened applesauce
  • 1 teaspoons vanilla extract
  • 0.5 cups vegan white chocolate chips or pistachios optional

Instructions

  • Preheat oven to 350°F and line baking sheet with parchment paper.
  • Whisk flour, matcha powder, baking soda, and salt in mixing bowl.
  • Beat coconut oil with both sugars until fluffy and well combined.
  • Mix in applesauce and vanilla until smooth and creamy, then stop.
  • Gradually add dry to wet ingredients and stir just until combined.
  • Gently fold in optional chocolate chips or chopped pistachios if using.
  • Scoop dough into balls and place on parchment-lined baking sheet.
  • Flatten each cookie slightly with your palm to create even shape.
  • Bake cookies for 10–12 minutes until edges are lightly golden brown.
  • Let cookies cool 5 minutes on sheet before transferring to rack.
  • Cool completely on rack for best texture and matcha flavor release.
  • Store in airtight container to keep cookies soft and flavorful longer.
