Ingredients

  • 2 medium zucchini grated and drained
  • ½ cup grated cheese cheddar or feta
  • 2 eggs large
  • ¼ cup chopped herbs such as dill or parsley
  • 1 clove garlic minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon baking powder
  • ¼ cup flour all-purpose
  • 2 tablespoon olive oil for frying
  • 2 tablespoon grated onion

Instructions

  • Grate zucchini and place in a towel; squeeze out as much moisture as possible.
  • In a bowl, mix grated zucchini, onion, garlic, cheese, and herbs.
  • In another bowl, whisk eggs, salt, pepper, and baking powder.
  • Fold the egg mixture and flour into the zucchini mixture until just combined.
  • Let the batter rest for 5 minutes.
  • Heat oil in a skillet over medium heat. Drop spoonfuls of batter into the pan and flatten slightly.
  • Cook 3–4 minutes per side until golden brown. Flip once.
  • Transfer to paper towels to drain excess oil.
  • Serve warm with your favorite dip or yogurt.

Notes

For extra crispiness, make sure to squeeze out all the water from the zucchini. Serve with sour cream, yogurt, or a garlic dipping sauce.
