Ingredients

  • 1 ½ cups Fresh shredded coconut Toasted for flavor
  • 1 ½ cups All-purpose flour
  • ½ cup Unsalted butter Room temperature
  • ½ cup Brown sugar
  • ½ cup White sugar
  • 2 large Eggs Room temperature
  • 1 teaspoon Vanilla extract Pure
  • 1 teaspoon Baking powder
  • ¼ teaspoon Salt
  • 1 cup Chocolate chips optional
  • ½ cup Chopped almonds optional
  • 1 tablespoon Orange zest optional

Instructions

  • Preheat oven to 350°F (175°C), line baking sheets with parchment paper, and toast shredded coconut.
  • In a large mixing bowl, beat butter and both sugars until light and fluffy. Add eggs and vanilla extract, mix until combined.
  • In another bowl, whisk together flour, baking powder, and salt. Gradually fold into the wet ingredients.
  • Stir in toasted coconut and any optional add-ins like chocolate chips, almonds, or orange zest.
  • Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets.
  • Bake for 12–15 minutes or until edges are golden.
  • Let cookies rest on baking sheet for 5 minutes, then transfer to wire rack to cool completely.

Notes

Chilling the dough for 30 minutes can help with shaping if the dough is soft. Mix and match add-ins for different flavor combos!
