Instructions
Preheat oven to 350°F (175°C), line baking sheets with parchment paper, and toast shredded coconut.
In a large mixing bowl, beat butter and both sugars until light and fluffy. Add eggs and vanilla extract, mix until combined.
In another bowl, whisk together flour, baking powder, and salt. Gradually fold into the wet ingredients.
Stir in toasted coconut and any optional add-ins like chocolate chips, almonds, or orange zest.
Use a cookie scoop or tablespoon to drop dough onto the prepared baking sheets.
Bake for 12–15 minutes or until edges are golden.
Let cookies rest on baking sheet for 5 minutes, then transfer to wire rack to cool completely.
Notes
Chilling the dough for 30 minutes can help with shaping if the dough is soft. Mix and match add-ins for different flavor combos!
