Ingredients

For the Truffle Base

  • 12 oz white chocolate chopped
  • 4 oz cream cheese softened
  • 2 lemons zested
  • 2 tablespoon fresh lemon juice
  • ¼ cup powdered sugar
  • teaspoon salt

For Coating (choose one)

  • 1 cup powdered sugar
  • 8 oz white chocolate for dipping
  • 1 cup shredded coconut

Instructions

Melt Chocolate

  • Place chopped white chocolate in microwave-safe bowl
  • Heat in 30-second intervals, stirring between each
  • Continue until completely melted
  • Let cool 5 minutes

Make Filling

  • Beat softened cream cheese until smooth
  • Mix in melted white chocolate
  • Add lemon zest, juice, powdered sugar, and salt
  • Mix until well combined

Chill

  • Cover bowl with plastic wrap
  • Refrigerate 2 hours or until firm

Shape

  • Scoop 1-inch balls
  • Roll between palms until smooth
  • Place on lined baking sheet

Coat

  • Roll in powdered sugar, OR
  • Dip in melted white chocolate, OR
  • Roll in shredded coconut
  • Refrigerate 15 minutes to set

Notes

  • Use fresh lemons for best flavor
  • Bring cream cheese to room temperature
  • Chill thoroughly between steps
