  • 2 Large mixing bowls for wet & dry
  • 1 Electric mixer or whisk for creaming butter & sugar

  • 1 Wire cooling rack to cool muffins
  • 1 Ice cream scoop for even batter portions

Ingredients

  • 2 cups All-purpose flour sifted
  • 1 teaspoon Baking soda
  • 1 ½ teaspoon Ground ginger
  • 1 teaspoon Ground cinnamon
  • ¼ teaspoon Ground cloves
  • ¼ teaspoon Ground nutmeg
  • ½ teaspoon Salt
  • ½ cup Unsalted butter softened
  • ½ cup Brown sugar packed
  • ½ cup Molasses slightly warmed
  • 1 large Egg room temperature
  • 1 teaspoon Vanilla extract
  • ¾ cup Buttermilk
  • 1 tablespoon Fresh ginger finely grated
  • 2 tablespoon Crystallized ginger chopped

Instructions

  • Preheat oven to 375°F (190°C) and line a 12-cup muffin tin with paper liners.
  • In a large bowl, whisk together the flour, baking soda, ground spices, and salt.
  • Cream the softened butter and brown sugar together until light and fluffy.
  • Add molasses, egg, and vanilla to the creamed mixture and blend until combined.
  • Alternately mix in the dry ingredients and buttermilk, beginning and ending with the dry.
  • Fold in the fresh and crystallized ginger.
  • Use an ice cream scoop to portion batter evenly into muffin cups. Bake for 18–22 minutes or until a toothpick inserted comes out clean.
  • Let muffins cool in the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

These muffins are a holiday favorite! You can add a lemon glaze or dust with powdered sugar for extra flair.
